- 1 tray of two Exceldor breasts cut into strips
- Olive oil
- Salt and pepper
- 2 onions, thinly sliced
- 1 yellow bell pepper, thinly sliced
- Homemade or store-bought pizza dough
- ½ cup (125 ml) homemade or store-bought BBQ sauce
- 1 cup (250 ml) grated smoked Gruyère
- 1 cup (250 ml) grated mozzarella
FRESH HERB SALAD
- ¼ cup (60 ml) chopped fresh coriander
- ¼ cup (60 ml) fresh chives, chopped
- ¼ cup (60 ml) chopped fresh parsley
- Drizzle of olive oil
- Drizzle of white balsamic vinegar
- Salt and pepper

- In a skillet, heat oil over medium-high heat and add chicken. Add salt and pepper. Brown chicken on both sides. Set aside on a plate.
- Add onions and bell pepper to the same skillet and cook until golden. Set aside.
- Preheat oven to 450°F (230°C) and a pizza stone if you have one.
- On a floured work surface, roll out dough until 30 cm (12 in.) thick using your hands or a rolling pin.
- Spread BBQ sauce on top of dough and garnish evenly, alternating chicken, onion, and bell pepper. Top with cheese.
- Place pizza on stone or on a baking sheet lined with parchment paper and bake for 10 to 12 minutes or until cheese and crust are golden brown.
- When ready to serve, drizzle olive oil over pizza and garnish with fresh herb salad.
