Apple and Cheese Stuffed Chicken Breast

Ingredients

  • 30 ml (2 tbsp) olive oil
  • 4 Exceldor chicken breasts
  • 8 prosciutto slices
  • 2 red apples, peeled and finely diced
  • 15 ml (1 tbsp) apple cider vinegar
  • 10 ml (2 tsp) honey
  • 15 ml (1 tbsp) chopped fresh thyme
  • 250 ml (1 cup) grated old cheddar

  1. Preheat the oven to 375 °F (190 °C).
  2. Heat 15 ml (1 tbsp) olive oil in a skillet over medium heat. Cook the sliced apple for 5 to 6 minutes or until lightly coloured.
  3. Add the cider vinegar, honey and thyme, bring to a boil and allow the liquid to reduce completely. Remove from the heat and leave to cool.
  4. Cut the chicken breasts in half, but do not cut all the way through. Open the breasts in a wallet shape, then stuff them with the apple and cheddar cheese mixture. Season with salt and pepper. Close the breasts again.
  5. Wrap two slices of prosciutto around each chicken breast. Secure with a toothpick.
  6. Heat the remaining oil in a large skillet over medium heat. Sauté the chicken breasts for 2 to 3 minutes on each side.
  7. Place the chicken breasts on a baking tray lined with parchment paper and put in the oven.
  8. Cook for 15 to 17 minutes.
