- 30 ml (2 tbsp) olive oil
- 4 Exceldor chicken breasts
- 8 prosciutto slices
- 2 red apples, peeled and finely diced
- 15 ml (1 tbsp) apple cider vinegar
- 10 ml (2 tsp) honey
- 15 ml (1 tbsp) chopped fresh thyme
- 250 ml (1 cup) grated old cheddar

- Preheat the oven to 375 °F (190 °C).
- Heat 15 ml (1 tbsp) olive oil in a skillet over medium heat. Cook the sliced apple for 5 to 6 minutes or until lightly coloured.
- Add the cider vinegar, honey and thyme, bring to a boil and allow the liquid to reduce completely. Remove from the heat and leave to cool.
- Cut the chicken breasts in half, but do not cut all the way through. Open the breasts in a wallet shape, then stuff them with the apple and cheddar cheese mixture. Season with salt and pepper. Close the breasts again.
- Wrap two slices of prosciutto around each chicken breast. Secure with a toothpick.
- Heat the remaining oil in a large skillet over medium heat. Sauté the chicken breasts for 2 to 3 minutes on each side.
- Place the chicken breasts on a baking tray lined with parchment paper and put in the oven.
- Cook for 15 to 17 minutes.
