Ingredients
- 2 Exceldor chicken breasts
- 1 x 450 g (1 lb) pizza dough ball
- 125 ml (1/2 cup) four cheese sauce
- 1 burratini 125 g, broken into pieces
- 60 ml (1/4 cup) Basil pesto
- 8 to 12 fresh basil leaves
- 15 ml (1 tbsp) balsamic glaze
For the marinade
- 30 ml (2 tbsp) olive oil
- 30 ml (2 tbsp) sun-dried tomato pesto
- 15 ml (1 tbsp) chopped fresh thyme
- 1.25 ml (1/4 tsp) chili flakes
- Salt to taste

- Cut the chicken breasts into thin slices.
- In a bowl, combine the ingredients for the marinade. Add the chicken and stir to coat with the marinade. Cover and marinate for 1 to 2 hours in a cool place.
- At the moment of cooking, preheat the oven to 450 °F (230 °C).
- Drain the chicken and place on a baking tray lined with parchment paper.
- Cook in the oven for 5 to 6 minutes, until the inside of the chicken meat is no longer pink. Remove from the oven.
- On a lightly floured work surface, stretch the pizza dough into a 30 cm (12 in) circle.
- Place the dough on a pizza tray. Coat the pastry with the four cheese sauce, leaving a small edge free. Top with the chicken and drizzle with the pesto.
- Bake for 12 to 15 minutes.
- Remove from the oven and garnish with pieces of burratini and basil. Drizzle with balsamic glaze.
