Ingredients

  • 1 block Halloumi cheese (about 230 g) cut in 4 cm (1½") cubes
  • 1 red onion cut in slices
  • 4 peaches cut in 4 cm (1½") cubes
  • 30 ml (2 tbsp.) olive oil

MARINADE

  • 125 ml (1/2 cup) dry white wine
  • 1 clove garlic, crushed
  • Zest of 2 lemons
  • 30 ml (2 tbsp.) olive oil
  • 30 ml (2 tbsp.) fresh herbs (tarragon, thyme, oregano)
  • Salt and pepper to taste

Directions

  • Combine all marinade ingredients in a bowl and mix well.
  • Put chicken cubes with the marinade in a reusable plastic bag and marinate 2 hours in the refrigerator.
  • Heat the BBQ to medium high.
  • Alternate chicken cubes, red onion, Halloumi cheese, and peaches on bamboo skewers.
  • Brush with olive oil and grill directly on the BBQ, reducing heat to medium. Grill for 4 minutes on each side or until chicken is cooked.
  • Place on a big serving platter and top with fresh herbs.
