For the croquettes
- 1 Exceldor ground chicken tray pack
- 7.5 ml (½ tbsp) smoked paprika
- 5 ml (1 tsp) garlic powder
- 5 ml (1 tsp) onion powder
- 5 ml (1 tsp) mustard powder
- Salt and pepper, to taste
- 1 egg
- 60 ml (¼ cup) oat flour*
- 7.5 ml (½ tbsp) baking powder
- 5 ml (1 tsp) chili seasoning mix
For the sweet and sour sauce
- 30 ml (2 tbsp) ketchup
- 15 ml (1 tbsp) less sodium soy sauce
- 10 ml (2 tsp) honey
*Note: You can replace the oat flour with blended oatmeal (powder).

- In a large bowl, combine the chicken, paprika, garlic powder, onion powder and mustard powder. Season with pepper and salt.
- Lightly moisten your hands and form a patty with 1 tbsp (15 ml) of the chicken mixture. Place on a plate lined with parchment paper and repeat for the entire mixture (approximately 24 patties). Set aside in the freezer for about ten minutes.
- Meanwhile, prepare two shallow bowls. In the first bowl, beat the egg. In the second, combine the oat flour, baking powder and chili seasoning mix.
- Dip each patty in the beaten egg, then in the flour mixture.
- Place in the basket of the hot air fryer and spray lightly with cooking spray.
- Bake at 375 °F (190 °C) for 15 minutes, turning halfway through.
- Meanwhile, in a small bowl, combine the ingredients for the sauce. Store in the refrigerator.
Can be stored for 5 days in the refrigerator, in an airtight container. Can be frozen for up to 3 months.
