Ingredients
- 2 Exceldor chicken breasts, cut into cubes
- 16 grape tomatoes
- 16 bocconcini cheese balls
- 16 fresh basil leaves
- 30 ml (2 tbsp) olive oil
- 5 ml (1 tsp) of Herbes de Provence (or a mixture of oregano, thyme and BBQ spices or salted herbs)
- Salt and pepper to taste
- Balsamic glaze to garnish
- Wooden sticks to assemble skewers

- Mix olive oil, Herbes de Provence, salt and pepper. Baste the chicken breasts with this mixture to coat them well.
- Cut the chicken breasts into cubes.
- Preheat a skillet over medium-high heat.
- Sauté chicken cubes until golden brown and fully cooked. (Cook between 5 to 8 minutes on each side.) Allow to cool slightly.
- On each wooden stick, thread a grape tomato, basil leaf, a ball of bocconcini cheese and a chicken cube. Repeat until all ingredients are placed on skewers.
- Arrange the skewers on a serving dish or plate and drizzle them gently with balsamic glaze just before serving.
