MARINADE
- 2 tbsp. (30 ml) olive oil
- 1/4 cup (60 ml) orange juice
- 1 clove garlic, pressed
- Zest and juice of one lime
- Salt and pepper to taste
SALSA
- 2 ripe peaches, peeled and diced
- 2 tbsp. (30 ml) red bell pepper, diced
- 2 tbsp. (30 ml) red onion, diced
- Zest and juice of one lime
- 2 tbsp. (30 ml) olive oil
- Salt and pepper to taste
SPICY MAYONNAISE
- 1/4 cup (60 ml) mayonnaise
- 1 tbsp. (15 ml) Chipotle pepper sauce
BUNS AND TOPPINGS
- Brioche buns
- Cooked bacon
- Lettuce
Directions

- Place all marinade ingredients and chicken breasts in a large sealable plastic bag. Seal bag and massage to coat chicken well. Marinate in the refrigerator for 4 hours.
- Meanwhile, make salsa in a small bowl.
- Heat a bit of olive oil in a grooved skillet and grill chicken breasts on high heat for about 6 minutes on each side or until chicken is cooked. Burgers can also be cooked on the barbecue!
- Assemble burgers by layering grilled chicken, lettuce, spicy mayonnaise, bacon, and peach salsa on brioche buns.
