PULLED CAJUN CHICKEN
- 3 cups (750 ml) chicken broth
- 1 tsp. (8 ml) smoked paprika
- 1 tsp. (8 ml) garlic powder
- Drizzle of olive oil
- Sea salt and ground pepper
- 1 tsp. (8 ml) Cajun spices
- 4 green onions, thinly sliced
REFRIED BLACK BEANS
- 1 small onion, finely chopped
- 1 1/2 cups (375 ml) black beans
- 1/4 cup (60 ml) water
- 1/2 tsp. (3.5 ml) chili powder
- 1 tsp. (8 ml) cumin powder
TOMATO SALSA WITH SUNFLOWER SEEDS
- 2 tomatoes, diced
- 1/4 cup (60 ml) cilantro, finely chopped
- Sea salt and ground pepper
- 1/4 cup (60 ml) sunflower seeds, lightly toasted
- Drizzle of olive oil and lemon juice
GUACAMOLE
- 2 ripe avocados
- 1 tbsp. (15 ml) lime juice
- 1 small clove garlic, grated
- Sea salt and ground pepper
TOPPINGS
- 8 tostada shells
- Arugula (or other type of lettuce)
- 200 g Bergeron Classique cheese, grated

Pulled Cajun chicken
- Place all ingredients (except olive oil, salt, pepper, and green onions) in a saucepan and bring to a boil. Reduce heat and let simmer for 30 to 35 minutes.
- In the meantime, prepare remaining fillings.
- Once chicken is cooked, shred using two forks. Add a drizzle of olive oil, spices, green onions, salt, and pepper and mix well.
Refried black beans
- In a saucepan, fry onion in a drizzle of olive oil until golden brown. Add black beans, water, and spices. Allow to reduce for 15 minutes over medium heat until water evaporates.
- Gently mash beans with a potato masher. Add a drizzle of olive oil if needed, season with salt and pepper, brown a few more minutes, and set aside.
Tomato salsa with sunflower seeds
- Combine all ingredients. Add a drizzle of olive oil and lemon juice, then season with salt and pepper.
Guacamole
- In a bowl, using a fork, mash the avocado flesh.
- Add all the remaining ingredients. Stir to combine.
Assembly
- Spread tortillas with guacamole, add refried black beans, arugula, chicken, and cheese, then top with tomato salsa and cilantro.
- Serve immediately.
