Maple Bacon Chicken Skewers with BBQ Whisky Sauce

Ingredients
- 4 cups water
- 4 1/2 tbsp salt
- 375 g maple bacon
- Fresh parsley, to garnish
For the BBQ sauce
- 1 1/2 cup packed brown sugar
- 1 1/2 cup ketchup
- 1/2 cup apple cider vinegar
- 2 tbsp Sortilège Canadian whisky and maple syrup liqueur
- 1 tbsp Worcestershire sauce
- 2 tsp paprika
- 2 tsp onion powder

- Place the chicken breasts on a work surface and prick into the meat on both sides using a fork. Set aside.
- In a large seal tight bowl, pour the water and add the salt. Stir to dissolve. Put the chicken breasts in the mixture, cover the bowl and place in the refrigerator for 1 hour. Do not marinate for more than an hour, the meat might become salty, and its texture could change.
- In a small saucepan, mix all the ingredients for the BBQ sauce, season with salt and pepper. Bring to a boil, reduce heat to low and simmer for 15 minutes, stirring from time to time. Remove from the heat and leave to cool.
- Place the marinated chicken on a work surface and cut in big chunks. (Ideally, cut the same number of chunks as the number of bacon slices you have!) Wrap each chicken chunk with a maple bacon slice and insert on a skewer. When you are done, set aside.
- Preheat your BBQ grill to maximum temperature. Oil the grates.
- Place the skewers on the grates and cook for about 20 minutes or until the chicken and the bacon are well cooked. Generously brush with the sauce during cooking! Garnish with parsley and serve with grilled broccoli rabe.
